I’ve always been someone who leads with kindness. It’s simply who I am, and it’s the energy I bring into everything I create.
For me, food has never just been about food. It’s always been about people. The way we gather, the way we connect, and how something as simple as a shared meal can completely shift the energy of a moment
At the center of all of that is love.
My connection to food started early, growing up alongside my dad in our family business, The Last Carrot. That space was built on more than just meals, it was built on care, intention, and genuine connection. I witnessed firsthand how food could bring people together, how it could hold space for conversation, comfort, and community. That foundation shaped everything for me.
I spent over 25 years running that business, building real relationships with customers, employees, and vendors. Relationships rooted in trust, familiarity, and care. It showed me what community truly looks and feels like, and it’s something I carry with me in everything I do today.
Hi, I’m Erin Compton.
I naturally thrive in spaces where people are coming together. There’s something meaningful about being part of that experience, about helping create an environment where people can relax, be present, and truly enjoy the moment.
I love taking the pressure off when someone is hosting, so they don’t have to worry about what’s happening behind the scenes. When things feel easy and people are at ease, you can feel the difference in the room.
And I care deeply about what I bring to the table, not just how it tastes, but how it feels. I’m drawn to food that is fresh, colorful, and grounded in a natural, effortless beauty. I love when a table feels vibrant and full of life without being overdone. Inviting, balanced, and something people genuinely want to gather around.
Knowing that what I’ve created becomes part of someone’s experience, part of their memories, means everything to me.
That’s what I bring into Coconut Grove Catering
Whether it’s a simple drop-off or supporting a larger gathering, my intention is always the same: to create something that feels easy, thoughtful, and rooted in love.
My Approach
I’ve always believed food should be simple, fresh, and actually make you feel better. My approach is established using real ingredients. Fresh vegetables, fruits, and whole foods, that naturally contain the vitamins, minerals, and nourishment our bodies need.
Food as medicine
To me, food is a form of medicine in the most natural sense. When we come back to what’s grown from the earth and prepared with care, we give the body something it understands and can truly use.
It’s not about overcomplicating things. It is about offering food people can trust, that supports how they feel, and brings them back to themselves.
